Watermelon Gazpacho Recipe
Hi tribe! What a WEEK! This week has been insanely busy for me which is great, but I sadly didn’t get to shoot a YouTube or IGTV video (ugh so bummed) 🙁 I just didn’t prioritize it but next week it is at the top of my to do list…What I did do is create this super fun recipe for you and I have to say it literally saved me this week!! Running from here to there left little time for me to cook so having this raw soup on hand ready to go was perfect for in between meals when I was short on time! I have been LIVING for this watermelon gazpacho lately!! CALLING IT MY GAZPACHO ON THE GO!!!! So simple to make, completely raw, totally refreshing and it’s gluten-free and vegan! This watermelon gazpacho recipe is so yummy, I’d say it’s more savory but it does have a touch of sweetness, and like I mentioned above, to is absolutely perfect for on the go! The recipe/measurements below made about 3 servings for me, but feel free to double them to make a larger batch!
Watermelon Gazpacho Ingredients
1/2 mini seedless watermelon
2 large tomatoes
3 Persian cucumbers (or any cucumbers of your liking!)
2 red beets
1 de-seeded jalapeno
1 cup green onion
1/4 cup cilantro
1/4 cup basil
2 TBSP. extra virgin olive oil or avocado oil
2 TBSP. apple cider vinegar
1-2 cups of water
Clean everything, dice it up and BLEND! So easy right!?! Also, as far as the cumin, salt and pepper: just season to your liking! I put 1-2 cups of water above as I started out with 1 but added a little more as I was blending as I wanted to think it out a little so I could easily drink it through a straw on the go, but you could totally get away with 1 cup of water as a lot of the ingredients are high in water and once blended create more liquid!
