Red Lentil Vegan Pasta Salad Recipe

I love this vegan pasta salad recipe for a few reasons; it’s super easy to make, requires minimal ingredients, it’s great for meal prepping, it’s filling and nutritious, it’s delicious warm or cold, AND the red lentil pasta is high in plant-based protein which is great for us plant-eaters 🙂 YAY!

I personally like to mix raw and cooked veggies in this vegan pasta salad, but feel free to leave all of the veggies raw, or all cooked!

Side note: It’s also great with avocado in it!


Ingredients for vegan pasta salad:

4 oz of POW Red Lentil Rotini Pasta from Ancient Harvest

1 Cup of vegan marinara sauce (I get mine from Trader Joe’s or Whole Foods!)

1/4 cup of sliced black olives

2 handfuls of baby spinach

1 Cup of lightly steamed broccoli florets

1 cup of raw zucchini

1/3 cup of sun dried tomatoes

2 TBSP raw pine nuts

Red peper flakes, garlic salt, black pepper and dried basil [season to your liking!]

Cooking Instructions:

  1. Lightly steam 1 cup of  broccoli florets / drain then set aside

  2. Cook 4 oz of POW Red Lentil Rotini Pasta from Ancient Harvest according to package directions / drain, rinse, then set aside

  3. In a medium saucepan on low heat warm up 1 Cup of vegan marinara sauce. Once the sauce is warm turn the heat off and add in 2 handfuls of baby spinach, mixing the spinach in until it softens and wilts

  4. In a large mixing bowl combine your sauce and spinach, pasta, broccoli florets and the following ingredients: 1/4 cup of sliced black olives, 1 cup chopped raw zucchini, 1/3 cup of sun dried tomatoes, 2 TBSP raw pine nuts / season to your liking with red peper flakes, garlic salt, black pepper and dried basil!
