Hi my babes! Just popping on here quick to share this amaaaaazing recipe with you. Today’s post is short, sweet and to the point! I’m sharing my go-to high in vegan protein dish that I frequently meal prep to have on hand! This vegan chicken salad recipe is one of my all-time favorite vegan dishes to make!!! It’s so simple (legit takes less than 10 minutes to throw together!) and it’s PERFECT for meal prep and on the go! This recipe yields about 3 servings (depending on your portion size 😉) and each serving is roughly 300 calories with about 10g of PLANT-BASED PROTEIN!

Ingredients For Vegan Chicken Salad Recipe

1 can organic chickpeas

1/4 cup vegan mayo

1.5 cups chopped celery

2/3 cup chopped onion

2 tbsp slivered raw almonds

1 TBSP vegan dijon mustard

Poultry seasoning

Salt + pepper

Juice of half a lemon

Cooking Instructions For Vegan Chicken Salad Recipe

  1. Rinse and drain your chickpeas then place them in a bowl and mash them up about 75% of the way leaving it a bit chunky for good texture!
  2. Add the rest of your ingredients to the mashed beans, mix and enjoy!
