VEGAN BUTTERNUT SQUASH SOUP RECIPE

This week I am DETOXING and focusing on adding in more nutrient dense foods to help my body glow from the inside out ✨ I came up with this vegan butternut squash soup recipe on the fly in my latest YouTube video and it came out so good that I had to share it here too 😍

What makes this vegan butternut squash soup a detox soup are all of the incredible healing foods used to make it!

BUTTERNUT SQUASH: Butternut squash is high in many nutrients like vitamin A, vitamin C, magnesium, potassium and is great for digestion!

CARROTS: Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants.

TOMATOES: Tomatoes are rich in the antioxidant lycopene, which helps protect your body from damage caused by compounds known as free radicals. Tomatoes are a great source of vitamin C, potassium, folate, and vitamin K!

ONIONS: Onions are nutrient dense and antioxidant rich. Onions have sulfur-containing amino acids, which help aid in detoxing  your liver, your body’s primary detoxifying organ!

GARLIC: Garlic has antiviral, antibacterial and antibiotic properties which make it an actual SUPERFOOD if you ask me 😉 Garlic also contains allicin which promotes the production of white blood cells and helps fight against toxins!

CILANTRO: Cilantro has potent anti-inflammatory, antiseptic, antifungal, antimicrobial and significant chelating properties, that bind to heavy metals that are removed from the body through elimination!

….SO MUCH GOODNESS IN THE VEGAN BUTTERNUT SQUASH SOUP! Ok, let’s get to this recipe!

VEGAN BUTTERNUT SQUASH SOUP INGREDIENTS:

✨ 1 whole organic butternut squash

✨ 1 medium sized organic onion

✨ 2-4 cloves of organic garlic

✨ 6 organic carrots

✨ 2 medium sized organic tomatoes

✨ 4 cups organic veggie broth

✨ 1 cup organic unsweetened coconut milk

✨ Celtic sea salt, black pepper and garlic powder to taste

✨ organic cilantro for garnish

HOW TO MAKE THIS VEGAN BUTTERNUT SQUASH SOUP:

It’s super simple!! Just wash, peel and chop all ingredients (I left mine kind of chunky as I used a high powered blender) roast in the oven until soft and golden brown, throw everything in the blenders and voila! 😊

I like my soups on the thicker side but for a more liquified texture just add more veggie broth or water!

I actually ended up topping my soup off with some red pepper flakes as well as cilantro + black pepper and it was SOOOOO GOOD!!!
